The MIYABI 5000MCD bread knife is a premium cutting tool designed for professional chefs and home cooks who demand precision when slicing through crusty breads, pastries, and dense vegetables. Featuring a core of MicroCarbide MC63 powder steel protected by 100 layers of Damascus steel, this knife offers exceptional edge retention and durability; however, its high-hardness steel requires careful hand-washing and maintenance to preserve its unique Masur birch handle and sharp edge.

No, you must hand-wash this knife to protect the integrity of the high-carbon steel and the natural wood handle.
It features a MicroCarbide MC63 powder steel core, hardened to 63 Rockwell, layered within 100 additional layers of steel.
Yes, the serrated edge is excellent for roast meat or fish in a pastry crust, provided the meat does not contain large, dense bones.
The Masur birch handles are crafted from natural wood, meaning each handle features a unique grain pattern, making every knife one-of-a-kind.
The MIYABI 5000MCD series is crafted in Seki, Japan, following traditional Japanese sword-making techniques.
Ensure the knife is being used on proper surfaces like wood or plastic cutting boards; avoid glass, stone, or ceramic surfaces which dull edges quickly.
Wipe the blade immediately after cleaning with a dry, lint-free cloth and occasionally apply a food-safe mineral oil to the wood handle.
To ensure the longevity of your MIYABI bread knife, always hand-wash with mild detergent and warm water immediately after use. Dry the blade thoroughly with a soft cloth to prevent moisture-related issues. Never put this knife in a dishwasher, as the high heat and harsh detergents can damage the wood handle and affect the blade's edge. Store the knife in a knife block, a wooden in-drawer tray, or on a magnetic strip, ensuring the serrated edge does not make contact with other metal tools to maintain its sharpness.
