Mexican Chia, a type of sage, was highly valued by the Aztecs as an important food plant due to its impressive levels of omega-3 fatty acids, proteins, vitamins, antioxidants, and minerals. This annual herb can grow up to 1.75 meters and blooms in the fall with blue or white flowers. Chia seeds are known for promoting health in various ways, and the gel of soaked Chia seeds has a high saturation value and is used for weight loss. Chia originates from Mexico but is also cultivated in Guatemala, Bolivia, and Australia. Seeds can be propagated indoors year-round, but it's best to start in early spring. Press the fine seeds lightly onto moist potting soil or herb substrate, cover with a little compost, and cover with clear film. Place the seed container in a bright, warm place (20-25°C), keeping the soil moist but not wet. Seedlings appear in one to two weeks, and can be planted in the garden when 5-10 cm tall. Chia thrives in sun or partial shade, and tolerates poor soil. Water regularly to avoid root rot. Mexican Chia can withstand dry periods and can be organically grown without pesticides. After flowering in September, the plant needs 45 frost-free days before the seeds can be harvested. The seeds can be harvested by gently shaking the flower heads. Mexican Chia is an annual plant and can be grown from saved seeds.
