It is particularly suitable for cooking, stuffing, sauces, and purees. This mid-ripening, bottle-shaped determinate tomato, with its balanced acid-sugar ratio, is rightly considered the number one culinary tomato variety in Italian cuisine and is truly unsurpassed for sauce preparation. After nearly falling into obscurity, the Italian Slow Food movement successfully initiated the reproduction and re-cultivation of this bottle or plum tomato. Tomatoes originally hail from South and Central America. You can begin seed propagation indoors from mid-March in a bright, warm location. Spread the seeds about 2 cm apart on moist coco coir or organic herb substrate and cover only lightly with soil. Keep the potting soil moist but not wet, preferably using a water spray bottle. Cover the seed tray with clear film to prevent the soil from drying out. Remember to poke a few holes in the film and remove it completely for about 2 hours every two to three days to prevent mold growth. Place the seed container in a bright, warm location with a temperature between 20°C and 24°C. The first seedlings should emerge after one to two weeks. Once the seedlings have developed their second set of leaves, you can prick them out up to the first set of leaves and plant them in small 10 cm pots with drainage holes, filled with organic vegetable substrate. When they reach a height of about 10 cm, support the plants with a small stick. From mid-May, after the last frost, the plants can be transplanted to a sunny garden spot with about 75 cm spacing or moved to containers. An ideal location is sunny and protected from rain and wind. As the plants grow, they will require strong support stakes or tomato cages. Water the plants evenly, but avoid waterlogging. Regularly remove side shoots between the stem and the base of the branches. Since the plants' root system develops strongly initially, visible shoots will grow relatively slowly at first. Approximately 4 and 8 weeks after transplanting, you can provide the plants with some organic vegetable fertilizer. Sow again the following year.
